Choil and Spine (Blade taper)

The knife’s edge isn’t the only thing that makes it sharp. The choil, or blade taper, makes it easier for the knife to slice through food. Similar to walking up a gradual incline vs a steep slope, our choil makes the blade edge more efficient.

Spine Thickness

In addition to the choil making it easier for the knife to slice through food, a thinner knife overall adds to this effect. We made our knife spine 1.8 mm wide to accommodate an even sharper cut. While most other knives are at least 2mm, usually 2.5 mm, our knife is thinner for ultimate precision and effortless cutting. The less blade material that has to push through food, the easier it is to cut through it.

Edge Curve Shape

Probably the most under appreciated aspect of sharpness, the curve of the blade also has a big impact. There is a reason samurai swords are curved and not straight. The right curve in the blade allows for smoother and more effortless cutting. Personally, we feel that our blade curve is just right.

Balance & Shape

Now that we have an incredibly sharp blade, choil taper, thin spine, and ideal blade curve, it’s time to make the knife easy to handle. The easier a knife is the handle, the easier it is to cut with. Balance is the key to this step. During production, our Foxel chef knife is weighted in the handle to put the balancing point perfectly under the bolster. This puts the knife completely under your control allowing you to cut with ultimate precision.

VG10 Japanese Steel

A strong, hard, stainless, rust-resistant and easy to sharpen Japanese ‘Super Steel’. Its chemical composition of Carbon, Chromium, Molybdenum, Vanadium, and Cobalt allows it to hold a higher rockwell hardness without increasing the chance of chipping.

Rust Resistant Vacuum Heat Treatment

Our steel is vacuum heat treated to achieve a higher rockwell hardness. This is your knife’s ability to hold an edge or stay sharper longer. This process also also increases rust resistance preventing any corrosion from occurring while the knife is red hot and more vulnerable to pit corrosion occurring.

Mirror/Electro Polished Surface

Polishing stainless steel to a gloss finish improves rust resistance, as it smoothes crevices where rust can collect making it more resistant to oxidation. This is why we use a combination of mirror and electro polishing, as well as citric acid treatment to finish our blades increasing their wear resistance and making them easier to clean.

A well balanced knife takes a lot of the effort out of cutting. You’ll find that our Foxel knife is correctly balanced for its role (as the balance point varies from knife to knife) making it easier to hold, more precise, and much simpler to cut, saving you time and energy in the kitchen.
